The machine gauges the dough-sheet coming from previous handling by two smooth rolls made of centrifuged cast iron, with very hardened surface, and equipped with scrapers for cleaning and detaching. The carbon steel free-standing structure consists of 30 mm thick side frames and is mounted on feed adjustable in height. The calibrating rollers have 320mm diameter and the upper one is provided with side dough containing flanges made of food-grade plastic material.
